Roast Beef Rolls

I finally found out why I wake up so sleepy in the mornings.  Apparently my mind just won't shut down.  A couple nights ago I woke up with an idea for a new recipe for Think With Your Taste Buds - Beef.  I couldn't put it to rest until I gave it a try.  It worked and it's delicious!  Make a note to look for my Roast Beef Rolls when Beef comes out this winter.

Beef Brats and Ravioli

This is another one for the book and boy is it good.  This idea came to me after a visit to Sams Club where I sampled the brat and had earlier sampled some spinach 3 cheese ravioli.  Turned out to be a great idea for a new beef dish.  Watch for this one this winter when Think With Your Taste Buds - Beef hits the stores.  Until then, don't forget to order your copy of Think With Your Taste Buds - Desserts.

Beef & Broccoli Stir Fry

Another delicious dish has just made it to the manuscript file for Think With Your Taste Buds - Beef.  As with all of my Taste Bud recipes, I had a recipe for Beef & Broccoli that I wanted to play with.  There were several ingredients that I didn't have on hand so I decided to Think With My Taste Buds and find substitutes.  Boy did I make some good changes.  This is one of the best Beef & Broccoli dishes I've ever made.  It's another one to put on your 'to try' list when Think With Your Taste Buds - Beef comes out this winter.

Slow Cook London Broil

Another one for the cookbook.  I've just added my version of Slow Cook London Broil with onions, peppers, chili sauce, beer and some wonderful seasonings.  This dish can be prepared the night before it's to be cooked with you only having to place everything in your slow cooker the next morning.  When you get home that evening you come in to a wonderful smell and a delicious dish of meat.  So make a note to be sure you give this one a try when Think With Your Taste Buds - Beef comes out this winter.  But until then, get your copy of Think With Your Taste Buds - Desserts in either paperback or e-book.

Ground Beef/Hashbrown Casserole

1 lb. ground beef
1 onion, chopped
1 can cream of mushroom soup
1 can corn, drained (optional)
1 cup shredded cheese
Tater Tots

Preheat oven to 350 degrees.  Brown beef and onions together and drain.  Spray a 9 x 13 dish with non-stick spray.  Spread beef mixture in bottom of dish.  Spoon soup over meat mixture.  Sprinkle evenly with corn and cheese.  Place a layer of tater tots over cheese.  Bake 45 minutes or until tater tots are golden brown.

Comments:  I've seen this recipe by many names.  When I decided to give it a try I made changes tofit my own taste.  I used a blend of onions and green bell peppers, Tater Tot 'tops' instead of full size tater tots and a blend of cheese combining white and colby.  It was delicious!

This is the perfect example in the nutritional changes that are made simply by just changing a couple of ingredients.  Changing from the ground beef to ground turkey, using the lowfat cheese and shredded potatoes instead of tater tots doesn't damage the taste of this dish at all.

Beef Stew - Crockpot Method

This is so good served over rice or noodles.  The meat I used is a lean cut of round but you can use any lean pre-cut stew meat.  You can use any mushrooms you might like.  I like portabella but white button are good too.  You can also add carrots giving you everything but the bread in one dish.  This is great served with slaw, cornbread, crackers or rolls.  Find my full recipe by going to Martha's Recipe Cabinet
