Cabbage Cauliflower Slaw


Most of us have a favorite recipe for slaw that we simply love.  I love mine so much that whenever I eat slaw at someone's home, at a restaurant, or any other place, I compare it to mine.  It is simple... cabbage, green onion, carrots now and then but just a little, equal amounts of sugar and vinegar and just enough mayo to coat.  Well, I decided to add something.  I had some leftover cauliflower from the soup I made a few days ago so I decided to chop some of it up and try it in my slaw.  I ended up with equal amounts of cabbage and cauliflower so I could make sure the taste of both came through.  This was delicious!  So if you like cauliflower, give this one a try.

Broccoli Slaw


Broccoli
Carrot
Onion
Mayo
Sugar
Vinegar

In a food processor chop finely broccoli, carrot and onion.  Add mayo and equal parts of sugar and vinegar to taste.  I used 1 large broccoli head/crown, no stalk, 1 large carrot and 1/2 med. onion.  The mayo, sugar and vinegar are added to suite your own taste.  I ended up with enough slaw for 4.  This has to be one of the best slaws I've had in a long time.  I came up with this while wanting slaw to go with my fish but found I was out of cabbage and it was a real hit.  It's also good on hot dogs.

Turnip Slaw


I'm not a turnip fan.  I love turnip greens (yes I'm from the south!) but I've never cared for the turnips cooked.  I did love to eat them like you would an apple though.  I would peel, slice, salt and chow down.  To me they had the flavor of cabbage which I love just about any way it can be served.

One of the men I work with brought in 2 five gallon buckets full of raw turnips from his garden.  He didn't eat them and didn't know what to do with them.  I hate to see anything go to waste so I brought some home to see what I could come up with.  Then it hit me.  Like I said, they taste like cabbage so why not make slaw.  I had drop-in company for dinner and decided to see if I could fool them.  I asked both if they liked turnips and both said NO!  I didn't mention them again until after dinner.

I made the slaw using shredded turnips instead of cabbage.  I did realize that the color was all white so I shredded just enough cabbage to add a few specks of green.  Both of my guests raved about the slaw!  After dinner I told both they had just eaten 'Turnip Slaw.'  Neither could believe it.

Zucchini Slaw


2 med., firm zucchini, shredded and squeezed dry
1/4 cup finely chopped onions (can use green onions and tops)
1 Tbsp. vinegar
1 Tbsp. sugar
Mayonnaise, enough to make creamy
salt & pepper to taste

Combine all ingredients and mix well.  Makes 4 servings.

Comments - make sure your zucchini is firm.  I peel and then use the outer part up to the center which is usually softer.  You can also add shredded carrots.
