Banana Nut Cake
This cake is PERFECT as it is but if you find you must make a change or two you might add some spices such as allspice, nutmeg, cinnamon or a mix of your favorite flavors. You can use pecans or walnuts, I used pecans. You can make the cake in a 13 x 9 baking pan instead of a tube pan. Something else I like to do is apply half of the icing while the cake is still hot, poking holes in the cake allowing some of the icing to run inside. I then add the rest of the icing after the cake cools. If you make yours in a baking pan you can easily do this but remember to adjust your cooking time according to your pan. I'm from Georgia, moved to North Carolina by way of Florida. I've been in Charlotte for 14 years and love it.
