When POM Wonderful contacted me to try their 100% pomegranate juice I said "of course." When I was a kid I loved eating those tiny seeds with their mouth twisting sourness but had never cooked using pomegranate. So this was a real test for me.
Before I tell you about Pomegranate Tapioca Pudding, I want to tell you some of the benefits of 100% pomegrnate juice. 8 oz. of POM Wonderful Pomegranate Juice daily will help:
Cardiovascular Health - In research participants it was found that pomegranate juice improved blood flow to the heart and help reduce arterial plaque.
Prostate Health - In research men with prostate cancer lowered their risk of cancer recurrence and spread.
Erectile Function (pay attention men) - In research, men drinking 8 oz. of 100% pomegranate juice daily for four weeks were 50% more likely to experience erectile improvements.
Now that you know just a few of the benefits, I'll tell you about Pomegranate Tapioca Pudding. It's sweet, but not too sweet, with a slight hint of tartness. The tapioca gives the pudding a texture that your mouth will love and the touch of cinnamon brings it all together.

I'm from Georgia, moved to North Carolina by way of Florida. I've been in Charlotte for 14 years and love it. The recipes in my book Stir, Laugh, Repeat are all tested by "Food Testers" of which I now have 24. They try a dish and rate it from 1-10 with only those scoring at least an 8 making the book. My website is a holding place for my 2nd book Stir, Laugh, Repeat... Again. Please visit my site to find new recipes and tips. All recipes are easy, using common ingredients and according to my testers, great!
When I wrote my introduction about a year ago and a lot has happened since then. I now have 5 blog sites that keep me pretty busy. Two of my sites are dedicated to nothing but recipes. Martha's Recipe Cabinet holds recipes that will be included in one of my upcoming cookbooks. Martha's Kitchen Korner consists of recipes that are good but still need just a bit of work. On A Book and A Dish you will find my book reviews and the author's favorite recipe. Stir, Laugh, Repeat holds reviews written about my cookbook Stir, Laugh, Repeat and the site you are now on is the "mother" site for all of these. Here you will find cooking tips, simple recipes and updates for additions to the "offspring sites." So, enjoy!

That pudding sounds wonderful!! I wonder how it would be made with coconut milk instead of the regular milk as I am dairy intolerant...
I think using coconut milk instead of milk would work quite well. It may come out just a little thicker but the added flavor should be a plus.
